Come join your church family and friends for an intergenerational celebration as we reinvent our Mardi Gras pancake dinner and dance party traditions for pandemic times. Our celebration will include dancing and eating breakfast-for-dinner together. We will honor our tradition of saying good bye to our Alleluias during Lent, by offering Alleluia coloring sheets, which you can color and then hide in your homes until Easter.
No RSVP necessary! To make the most of the party, we invite you to:

West Tisbury Congregational Church Mardi Gras Pancakes
Makes 16 pancakes
1 cup white flour
1/3 cup whole wheat flour
1/3 cup cornmeal
1/3 cup oats
2 teaspoons baking powder
1 teaspoons baking soda
1/2 teaspoons salt
1 tablespoon sugar
2 eggs
1 cup yogurt
1/2 cup buttermilk
2/3 cup whole milk
1/4 cup canola oil
Sift flours and cornmeal with baking powder, baking soda, salt and sugar. Add oats and stir to blend. Beat eggs and stir in yogurt, buttermilk, milk and canola oil. Add egg mixture to dry ingredients and mix gently. Batter should be lumpy. IMPORTANT! Overmixing will make tough pancakes!
Heat griddle or large skillet over medium-high heat, or at 300◦ to 325◦ on an electric griddle. Brush griddle generously with oil. Pour batter, about 1/4 cup at a time, onto griddle, making sure not to overcrowd. When pancake bottoms are brown and top surface starts to bubble, 2 to 3 minutes, flip cakes and cook until remaining side has browned, 1 to 2 minutes longer. Re-oil the skillet and repeat for the next batch of pancakes.
